Peter Shield has an organic herb farm in the high Corbières. When the skies are clear in winter, this is his view of the Pyrenees: Quéribus, one of the ‘Cathar’ castles on the left, Canigó, the highest peak on the right. But no, that isn’t Peyrepertuse sticking up. As Peter says “You need to be about 200 metres higher up Mont Tauch to see Peyrepertuse – it’s a rock we all feel a horrible temptation to climb up to and give a push – hence its name, tumble rock.”
